The Rise of Hot Honey: A Sweet and Spicy Revolution

Posted on ()

The Sweet and Spicy Treat

Hot honey has taken the culinary world by storm, blending the natural sweetness of honey with a fiery kick that elevates everything from simple snacks to gourmet dishes. Whether you’re drizzling it on pizza, adding it to a cheese board, or serving it with fried chicken, this versatile condiment is a must-have in any kitchen. But where does hot honey come from, and how did it become such a popular staple?

Let’s discover the history of hot honey, its uses, and why our Hot Honey deserves a place in your pantry.

The History of Hot Honey

Hot honey, while relatively new to mainstream kitchens, has roots in ancient culinary traditions. Infusing honey with spices has been practiced for centuries, particularly in Middle Eastern and Mediterranean cultures. These infusions were often used to add complexity to savory dishes and were believed to have medicinal benefits. However, the modern rise of hot honey as we know it today is credited to Mike Kurtz, the founder of Mike’s Hot Honey in Brooklyn, New York. In the early 2000s, he began drizzling spicy honey on pizza, and the concept quickly caught on, spreading from pizzerias to restaurants and home kitchens around the world.

Since then, hot honey has exploded in popularity, becoming a trendy and beloved ingredient. Its unique combination of sweet and spicy makes it incredibly versatile, appealing to those who love bold flavors. Whether you’re adding it to a marinade or pairing it with charcuterie, hot honey adds a distinctive flavor profile that’s hard to resist.

Hot Honey

Our Hot Honey

At Manna Epicure, we’ve taken this concept and made it our own with our Homemade Hot Honey. Crafted with raw bluegum honey, chili, garlic, thyme, and onion, our hot honey offers a rich, layered flavor with just the right amount of kick. It’s the perfect balance of sweetness and heat, with aromatic herbs to add depth. Our hot honey is not just a condiment—it’s a culinary experience in every jar.

Packaged in a beautiful glass jar with a wooden lid, our Hot Honey is as visually appealing as it is flavorful, making it a perfect addition to your kitchen or an ideal gift for food lovers. You can find it in-store, on our new bar snack menu, and in our online store, ready to be shipped straight to your door.

What You Can Use Hot Honey For

The beauty of hot honey lies in its versatility. It can transform a wide range of dishes, adding a sweet heat that’s perfect for everything from savory meats to sweet desserts. Here are a few creative ways to incorporate hot honey into your meals:

  • Drizzle on Fried Chicken: One of the most popular pairings for hot honey is fried chicken. The contrast of crispy, savory chicken with the sweet and spicy honey is simply irresistible. At our restaurant, we serve Hot Honey with our Panko-Crumbed Chicken Lollies on the bar snack menu. The crispy coating and tender chicken are elevated by the heat and sweetness of our hot honey—an absolute must-try!
  • Topping for Pizza: Just like the original Brooklyn pizzerias, hot honey makes a perfect topping for pizza. Drizzle it over pepperoni or sausage pizza for a bold, spicy-sweet flavor.
  • Add to Cheese Boards: Hot honey pairs beautifully with cheese, especially sharp or creamy varieties like cheddar, brie, or goat cheese. Its sweetness complements the richness of the cheese, while the spice adds a little excitement.
  • Marinades and Sauces: Mix hot honey into your marinades for meats like chicken, pork, or shrimp. It also works well in salad dressings or as a glaze for roasted vegetables.
  • Cocktails and Desserts: Don’t limit hot honey to savory dishes! Stir it into cocktails, like a hot honey margarita, or drizzle it over desserts like ice cream, waffles, or cheesecake for a unique twist.

For those who appreciate the finer things in life, our Chateaubriand is a must-try. This premium cut of beef is served with onion rings, a house salad, Pont Neuf potatoes, and a choice of Béarnaise sauce or a rich red wine jus. The Chateaubriand is known for its tenderness and flavor, making it a true showstopper on our menu. The bonus is that this is one of a few dishes that is carved table-side and is the perfect dish to share. We also have a stunning Rib-eye for two done in the same way.

Origins and Flavors: Chateaubriand is a classic French dish named after the French writer and diplomat François-René de Chateaubriand. It’s traditionally prepared from the center-cut of the beef tenderloin, offering a texture that’s melt-in-your-mouth tender. The accompanying sauces and sides provide a balance of flavors, from the creamy Béarnaise to the robust red wine jus, making each bite an experience in itself.

Our Beef Cheek Bourguignon is a dish that combines the slow-cooked richness of traditional French bourguignon with a uniquely South African twist. Served with a samp risotto, this dish is the epitome of comfort food, offering deep, savory flavors that are perfect for any occasion.

Origins and Flavors: Bourguignon, a classic French stew, is traditionally made with beef braised in red wine, garlic, onions, and mushrooms. The Launch of the Manna Bakehouse should get you excited

Since we moved to our bigger space, the launch of the Manna Bakehouse was our main priority. Manna has always been known for their great bread and cakes, but now we’re stepping it up a notch…

"Nothing beats the smell of walking into a space where something has just been freshly baked"

One of the main reasons for us moving to a new location is that our vision for Manna has outgrown the space we were in.

We needed some more space to focus on all the great ideas we had running around in our minds.

One of them was the launch of the Manna Bakehouse.

Manna has been baking their own bread for a long time, apart from a small gap in time during the Lockdowns. When we moved to the new premises, it took us a while to find a new baker with the necessary skills to start that up again, but we did, and we are baking our own amazing breads again.

In the meantime, the owner Agnés, has found a love for the sweeter side of baking!

She loves experimenting with new techniques and the desserts and sweet, baked goodies from her is sensational!

Manna Bakehouse
Our Delicious Canelé

With the launch of the Manna Bakehouse, we hope to grow this new venture into seperate business as a part of our Deli and the “take-home” range that we are busy developing.

Agnés is happiest developing new recipes for incredible sweet treats, and these are also available on order for your special occasions, celebrated either at Manna or at home.

Feel free to contact us at any time if you are interested in any of these amazing creations. Please do give us a fair notice, because some of these incredible desserts take up to 4 days to create.

Winter isn't all bad with our Lamb Ragu Promotion

It’s that time of the year when Cape Town as a whole goes into hibernation, but this delicious combo of our Lamb Ragu and the Provenance Shiraz is the perfect reason to come out from it.

Some people LOVE Winter, but most Capetonians don’t. We tend to lock ourselves indoor with our PJ’s and Uber Eats and hope and pray for Summer to come back.

This winter is a bit different though…

We have paired up with the good folk from the incredible Saronsberg Winery to bring some joy to an otherwise miserable Winter.

Lamb Ragu

For the whole of Winter, we will be running a promotion in conjunction with them to offer you a match made in heaven.

Our slow-cooked Leg of Lamb Ragù, tossed in our home made Tagliatelle, and paired with their beautifully balanced Saronsberg Provenance Shiraz, is an incredible combination for a cold, Winter’s night.

But it gets better

How does this beautiful Pairing work? Well, usually our Saronsberg Provenance Shiraz is R80 per glass on our Winelist, but if you have it with our Lamb Ragu, you only pay R70.

But it gets even better than that!

We have decided that to make it even more special, every Wednesday you will only pay R50 for your glass of Saronsberg Provenance Shiraz when taken with our Lamb Ragu!

How much more amazing value do you want?!

So there you have it! Every day is special with this pairing, but Wednesdays are even better with an amazing R30 off from the listed price of this amazing wine!

If you’re not sure what to do on Wednesdays, now you have a great idea!

Hope you get to experience tis blissful combination soon.

After 9 Iconic Years, we decided to put it down on paper

The Manna Cookbook was a Passion Project that has been inspired by the feedback on some of our most iconic dishes, so you can enjoy them at home

Manna Cookbook

The Manna Cookbook was the brainchild of Agnés, and a homage to Chef Johnny and the legacy he has helped start at Manna Epicure.

The Cookbook is a collection of some of the most iconic recipes from every facet of the menu, from Sauces, to the extraordinary baked goods Manna became known for.

In The Manna Cookbook

We start the book with our Famous Bakery Section. Manna was long known for their exceptional bakery that featured some amazing breads. For awhile we stopped, but since we are at the new space, we started baking our favourites again.

One of the most popular recipes you’ll find in this section is undoubtably our Famous Coconut Bread, which alone makes this book worth the Purchase price.

Next, we have the Afternoon Tea Section and all the necessary baked goodies that usualy goes with that. For more information on our Afternoon Tea Offering, CLICK HERE.

The Menu

After those, we get to our Menu along with all the Classic Dishes from us that inspired the creation of the Manna Cookbook.

South African French Fusion RestaurantWe start off at the beginning, with a collection of our Starters and Salads, in true South African and French Fusion style. We continue the culinary journey with Classics like our Baked Camambert , Skaapstertjies, Escargot Persillade, our Caesar Salad, along with our famous steak tartare that gets prepared tableside – all that still features on our Menu.

Moving on to the Iconic Manna Dishes, we see the recipes for our famous, classic Beef Bourginon, along with dishes like our Moules Marinière, Sticky Pork Spare Ribs, along with our Phenomenal Chateaubriand.

Manna CookbookNo Menu is complete without all the Sides and Sauces that elegantly rounds off every dish. From a Simple Beurre Blanc,  to the complex and velvety Red Wine Jus, all of our most popular sauces and dressings are available in the Manna Cookbook.

But it’s not just the Sauces, but also the Sides that compliments every dish on our Menu. Our Legendary Potato Gratin and our Onion Rings that looks like Doughnuts also features here, even though we weren’t sure about giving away our secrets to these…

And last, but definitely not least, the dessert section featuring South African Classics like a Peppermint Tart and our famous Malva Pudding.

It also includes cakes with the recipe of our Dark and Velvety Chocolate Nemesis being one of the best reasons to get the Manna Cookbook.

In Conclusion

Full of stunningly shot food pictures and incredible recipes, this cookbook is an absolute steal for only R385, available in-store at Manna. We only had a limited number printed and it will probably not be repeated again, and after quite a few suffered some water damage, we are running quite low on stock, so get yours before it is too late.

Spoil that special person in your life by giving them a book created with love and care, filled with dishes that invoke long-lasting special memories!

We’ll leave you with some of the incredible photography featured in the Manna Cookbook.
